Coconut cheesecake with toasted coconut flakes
This is a coconut lover's delight! The taste of coconut is very pronounced in a very good way! I used coconut extract to flavour the cheesecake and added moist, sweetened coconut flakes into the batter. After baking, I placed some toasted coconut flakes on top... which added a nice contrast in texture- a crunchiness that went well with the rich and creamy cheesecake! This one's a keeper!!!
